Do the shuffle!

This has been a great work-out week. I have started back on weights full-time and feel like a million bucks. There is something about weights that give me confidence. Maybe it is because I don't feel so flabby.

I love going to gym. It is a nice break from Miss Agnes for a couple of hours a day and it makes me feel better about myself. But, I was having a hard time concentrating on whhttp://www2.blogger.com/img/gl.link.gifat I was doing because of my music source.

I had been using my old iPod. And, I mean old. It was one the first iPods ever released. I swear the thing weighs 5 pounds. Hahahaha I had complained about it a little, okay a lot, to Sean. He decided to help with my efforts and got me an iPod shuffle. It is the cutest little thing. I love it. It clips right on to my shirt and is so light I don't even know I have it on.

But the best part of this week came in the mail today. The t-shirt I ordered from Black Phoenix Trading Post ()arrived. I had never bought a shirt from them before but this months is super cute, pink, and has a girl skull on it. I purposely bought it a size too small so I could use as inspiration. Guess what?!?!? It fits!! I couldn't believe it. Even though I can't see the changes in my body there are obviously some changes going on. I can't wait to wear my shirt tomorrow. I am so proud and excited!!

What's for dinner?

I have been craving coconut shrimp. I LOVE coconut shrimp but I hardly ever order or make it. It is too fattening. A single serving of about 4-5 shrimp can be over 600 calories!! So, I made these tonight. They were awesome. Sean said he liked them better than the fried ones. I really liked them too. They were super easy and super tasty. I served them with A Taste of Thailand Peanut Noodles (). Everyone should have these in their pantry. The noodles were great. Sure, there are more calories in a serving of the noodles than a bunch of the shrimp but it was a nice treat. I am a Thai food snob. I took cooking classes on Koh Samui and usually make Thai food from scratch so trust me they are tasty.

It was a perfect dinner.

Baked Coconut Shrimp

6 Egg Whites
3 cups Panko
½ teaspoon Cumin
2 cups Flaked Coconut (unsweetened or sweetened)
A good shake of Garlic Granules
2 LB’s large (31-40) shrimp

Preheat oven to 500
Spray a baking sheet with olive oil spray
Beat egg whites in bowl until it becomes a thick foam
On a large plate mix panko, cumin, coconut, garlic

Dip shrimp in egg whites
Dip in coconut mix
Lay shrimp on baking sheet
Bake about 6 minutes

Walking on sunshine

Why is it the healthier I eat the worse my stomach feels? Ever since I had the evil of all evil stomach viruses I have been very careful about what I eat. You would think my tummy would feel better. It has been over a week since I barfed off 10 pounds!!

Since I have started this blog I am down almost twenty pounds! That is 35 total. All of my pants are too big. It is a wonderful feeling.

I missed last week at the gym but I have been kicking butt with the exercise this week. Instead of going today we took Agnes to the park. It was 74 degrees here today. It was absolutely fantastic. It was her first real picnic. Good food, good laughs, and loads of running around. It felt awesome to be in the sunshine. Sean and I both felt like little kids today. Watching Sean take Agnes down the big slide was brilliant. Another dad took our family picture. It is the first full body picture of myself I haven’t edited in a really long time. I look skinny! Not as skinny as super model but skinnier than I was this time last year!

Bring Me A Bucket

The good news is I am 10 pounds lighter. The bad news is I had a stomach virus. I know the weight is will be back on in a couple days.

We have all been sick since Saturday. Saturday was Agnes sick day. She even ended up in the emergency room for a few hours. Sunday was Sean’ sick day. Poor guy. Monday was the worst for me. I had a temp of 102.5. I thought I was going to die. I have been pretty much been living on saltines and popsicles. I tried to eat some chicken noodle soup on Monday evening but I couldn’t bring myself to eat a whole bowl. Tonight was the first “real” meal I have had since Sunday. I had a grilled chicken salad. It tasted divine but my stomach isn’t agreeing. Or perhaps, it is the few bites of Sean’s German chocolate cake I had. Hey, I couldn’t help myself. Why can’t I have an upset stomach all the time? I would be so skinny! At least I wouldn’t have to be disciplined about my food choices. Although, having a stomach ache the past few days has been hell.

I haven’t been to the gym all week. I feel like a sloth. I am just scared to do any cardio right now. I can only imagine being on the elliptical and throwing up on it. I don’t think the other members would be too happy. ☺

This week keeps getting better and better

We had to take Agnes to the ER last night. Starting at 4 p.m. she threw up 23 times. Poor little bug! They hooked her up to an IV, gave her some anti-nauseous meds, and let her rest for a few hours. We were home by around 3:15 a.m. or so. She is doing okay now but we are all really, really tired.

What a long week! Seriously, is it Monday, yet?
