"Where's my cake, Bedelia? " - Creepshow

The cake doesn't look that great. The woman I made if for gave me 20 minutes to get it put together before she needed it. I didn't even time to do a border around either cake. She kept sending Sean to see how much longer. It really made me mad. I had spent a long time making all the decorations and wanted the whole cake to look cute. Grrrr....The icing job looks like crap to me but she loved it and that is all that matters. I do love my flamingos and curly things. The leis are the only inedible thing on the cake. Everyone at the party freaked out and thought it was the cutest cake ever. That made me feel good but I know it could have been better.



The cake was a simple with cake filled with fresh picked Shuksan strawberries and whipped cream.

***EDIT*** This is the whipped cream icing recipe! I forgot to put it in my post.

Combine whipping cream and sugar in mixing bowl. Whip to soft peak stage. Add piping gel and vanilla, then continue to whip stiff peaks. Do not overbeat.

YIELD: 1 1/2 to 2 cups.








I made some cupcakes for the same party. These are vegan white cake with a vanillia "butter" cream icing. They are like rainbow cupcakes except they are just red, white, and blue on the inside.

"An apple a day keeps the doctor away"

A couple of weeks ago I bought some massively huge apples at the farmer's market. We had a few left over that were starting to get soft so I decided I had to bake something with them. I didn't have enough time to make a pie so I decided on French Apple Cobbler.

What is French Apple Cobbler? It is apple cobbler with the addition of vanilla. Oooooh, fancy!! It turned out really well. Agnes and Sean almost ate the whole thing.

FRENCH APPLE COBBLER

Ingredients:

Apple Filling:
5 cups tart apples, peeled, sliced
3/4 cup sugar + I throw in a couple tablespoons of brown sugar
2 tablespoons flour
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 teaspoon vanilla extract
1/4 cup water
1 tablespoon butter, softened
Topping:
1/2 cup flour, sifted
1/2 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons butter, softened
1 egg, slightly beaten
Preparation:

In a medium bowl, combine apples, 3/4 cup sugar, 2 tablespoons flour, cinnamon, 1/4 teaspoon salt, vanilla and water. Turn into a lightly buttered 9-inch square pan. Dot apples with 1 tablespoon butter.
Combine all topping ingredients. Beat with wooden spoon until batter is smooth. Drop batter in 9 portions, over the apples, spacing evenly. Batter will spread during baking. Bake 35 to 40 minutes at 375° or until apples are tender and crust is golden brown. Serve warm with cream or ice cream.


Okay, okay, I know I have been posting nice fattening recipes. I have been trying to keep up with my exercise but after the back surgery it has been really hard for me to get motivated again. I am so scared I am going to hurt myself again. I know Bikram would make my back feel so much better but I have a few pain killers left to help! :)

Anyway, an apple a day...right?

It has been two days with no sugar. No cakes, no brownies, no cookies, no white or wheat bread (had rye bread with no sugar in it last night), etc. Who knew it would be this hard to not eat sugar.

I am craving a cuppa tea and pain au chocolat. I think the whole reason I am having these horrible, horrible cravings is because I am not allowed to have them.

I have been asked to make a few St. Patrick's Day cookie bouquets with my Irish shortbread cookies. I got this recipe from Mrs. Burns (she is the mum of a very good friend) when I was in Ireland. It is seriously the best cookie in the world. How am I suppose to make these and not eat one? I have no self control.

I feel like an epic failure today. I had a Diet Coke with lunch. This might be my true addiction. Last Autumn I went 6 months without Diet Coke. The first couple of weeks were the hardest and then I didn't miss it. I just need start again tomorrow.

I am definitely sick of being the "fat one" among my friends. Ugh.

That is enough of my feeling sorry for myself. Well, at least for today.
